Seirei no Moribito / Moribito: Guardian of the Spirit Directed by Kenji Kamiyama, and created by Production I.G. This show probably has the best backgrounds out of any anime series I’ve seen. It’s basically feature film worthy art for 26 episodes.

This series is the real deal.
